Title: Helmet Off and Defensive blocking

In the NFL does  a player have to leave the field if his helmet comes off? 

Also the offense is running a sweep with 2 A players leading the RB.  One defender stands in their way.  Is it illegal for the defender to dive at one of the A player's legs to take them out?  I know in NHFS that is illegal but is it in the pros?

No, as far as I can see from looking through the rule book, there is no provision for players to be forced to leave the field if their helmet comes off.

In terms of your 2nd question, again no.  The only mention I could find would be where they were doing it to an eligible receiver.
