Just a poll to see what officials are paid to work 7-on-7.
Round these parts, the 'summer HS league' plays on a 40-yd field, 25-min running clock (no timeouts) 2 officials and the per-game fee breaks down to $12.50/game per official.
What is everyone else getting paid and game lengths.

We work 7-on7 free of charge.

We generally get $20 per game and pay the scheduler $1 per, so we net $19. This is normally 3 man for high school and 2 man for jr high

7 on 7 's here are ad hoc things put together by the coaches. At least in my area, officials are not utilized.

We have 20 minute running clock halves with 5 minute half time.

One group does $50 per official per session, but it's usually only one official per game and not very formal. A couple others are free.
Personally, I don't need to get paid for 7 on 7 that's not part of a formal competition. It's good practice for players and officials.

Rookies from my chapter here in NJ are pretty much required to work these. It used to be $10 a game. Not sure if it's changed. Great work for newer officials in getting them used to varsity speed.

I usually only work one 7-on-7 tournament each year to help out a friend so my experience is limited. We probably work 6-8 games during the day. They pay $60-$70 per man for a Saturday tournament, but they also give us some "goodies" to go along with the pay. Sonic is one of the sponsors so we typically get Sonic gift cards and t-shirts if they have any left over. We also get a catered lunch they have for the coaches and workers.

For here, we have 2-man most of the time.
H: who stays near LOS & has the QB 4 count, but he floats downfield 10-15 yds for coverage on that side.
B: who starts 15yds deep on the far hash and has the whole sideline and deep middle to himself. - he really has to read/react to where the ball will be more than going by his Friday keys.
If 3-man: a S who has deep to H's side and B can then focus more on "his" side of the field.

Man we have it good in Texas. $25/game, same rules as y'all.
Generally 2 man crews for leagues where winning doesn't matter, and 3 man for tournament games.

We usually do some variation on LOS wing, LTG wing, Back Judge

Same game parameters as the OP except $25/game and only one official (Back Judge) who is expected to hustle towards the point of attack once it's been established.

In our area, the single largest district. which has 18 of the 25 schools we service, has a policy that bars teams from off-season full-contact scrimmages. This makes the 7-on-7 passing leagues the only opportunities we have to take the field and work on our pass coverage. We work them for free, since they're not school sanctioned. We use 2- or 3-man mechanics. Coaches will time the QB and will declare a sack if it exceeds the time limit.
