Usually happens in our under classmen games but
mouthpieces out or helmet straps not buttoned up
is my question.  Years ago we had the "failure to
wear required equipment" signal which was right
palm behind white hat's head and we popped them
5 yards or if we caught it prior to snap we did
both that signal and delay of game signal and marched
off 5 yards.  Now not seeing that signal or for that
matter that penalty in the 2021 NFHS rules book.
Could use some advice/direction/mentoring on this please.

No longer a foul. Now we send the player off for a down.

ART. 5 ... When any Required player equipment is missing or worn improperly, an official's time-out shall be declared. If the missing or improperly worn equipment is detected during the down or subsequent dead-ball action related to the down without being directly attributable to a foul by an opponent or if a player is wearing otherwise legal equipment in an illegal manner, the player shall be replaced for at least one down, unless halftime intermission or an overtime intermission occurs. If proper and legal equipment has become improperly worn through use but prompt repair is possible and does not delay the ready-for-play for more than 25 seconds, such repair may be made without replacing the player for at least one down

As suggested, sometimes "an ounce of prevention can be worth a pound of cure".  Depending on where you are, in relation to the player, a simple, general announcement like "Chinstraps" or "Mouthpiece" might jar some forgetful players into correcting themselves in time to avoid a problem.

NFHS decided in their wisdom to use this signal for disconcerting acts and to change the penalty for equipment violations to stop the game, send the offending player off the field to fix his equipment (or add the missing pieces), and continue the game without him until the equipment issue is fixed.

I will make a general announcement about checking mouth pieces or chinstraps, or I will be specific and say "number 32, put your mouthpiece in!"

I have delayed the RFP for 25 seconds.

If the snap is imminent I will stop the clock and send the player out.

I agree that the removal of the yardage penalty is a good idea.
