SEC have some conference rule about headsets? Vandy's are not working so they made Ole Miss take theirs off????

I believe so.

So, NCAA rules do not address the loss of one team's communication via headset (ie. making other team remove theirs)? I swear I read this somewhere - maybe UIL (Texas) - but I can find it nowhere now.
-
It might be a pro rule, but it seems only fair.

NCAA rules specifically state that Headsets are not part of the playing rules. Since Texas uses these rules, we stay out of the headset outages. Buy a better headset. It's not the other teams fault yours aren't working.
