Will we ever see an offensive 1-point safety?

This is the only way I can imagine this happening.

Team A has scored a touchdown and attempts the extra point. The kick is blocked and recovered by B20 who sprints toward the end zone. A30 runs him down, hits him from behind, and strips the ball, which is recovered by A30 at the A 3 yard line. A30 is chased into his own end zone by B16, where he is tackled. The score is now 6-1.

EDIT: got my teams mixed up. A surrenders a 1 point safety and B has one point on the scoreboard.

It happened in a game a few years back, 2004 I think, Texas vs. Texas A&M. Team B recovered the ball and retreated into his own end zone.

Funny coincidence - there have apparently been only two times in NCAA history that a one-point safety has happened.

The 1 point safety has happened twice in D1 college football, and 7 times at all levels, the first time being in 1996. Obviously the blocked extra point scenario is the only way it's happened so far, but I'm talking about a situation where the offense tries the extra point and the ball ends up dead in the end zone for a loss of 98 yards and one point, where the game could potentially end with the losing team only scoring one point.

Probably not in NFHS.  It's not impossible but the odds would be staggering.  In your scenario, the ball is dead when the kick was blocked and it is apparent it will not score.  B20 picks up a dead ball.

A 6-1 score is impossible in NFHS. B/R cannot score on a try.

A, in unlikely theory, could score a 1 point safety -- but it would have to be on a scrimmage try (as you said, the obviously failed kick ends the down), and then B would have to somehow force the ball into their own end zone without first gaining possession, since the ball would be dead as soon as B gains possession.

So, about that Texas A&M one point safety.  Is that not illegally kicking a loose ball by Texas?
Result of the play is a safety, A&M would have chosen to accept the foul and LOD, try over, A&M 13 , Texas 12?

Yes, it should have been flagged as illegally kicking the ball, it is not controlled by the holder when it is kicked.
