Mechanics Help - 5 Man Crew

Working with a 5-man crew in a game last night where both teams are running a no huddle, immediately back to the line offense on every play.   Definitely keeps a 5-man crew on their toes.  Would like comments on how the U should handle the "bubble screen" play per below.

A snaps with QB in shotgun and the entire pocket starts moving to my left as the double tight ends cross right in front of me while the QB rolls out to my left behind the pocket.  2-3 secs later the Center, tackle, and Guard move to my right and downfield as the lone running back who was in a blocking position behind the linemen, slides in behind them (QB still rolling out left).  QB then turns and throws a pass back across field to the RB who's now heading downfield behind the three linemen who are at least 4-5 yards downfield, catches the pass on the run, and continues downfield.  1st time it happened, I just had no angle to tell if the pass was caught beyond the line, while the play went about 65 yards for a TD.

On the play both wing officials are gone downfield with the two WR's (both started wide in the backfield), and no help on line calls.  The 2nd time they ran the play I recognized the blocking and did a much better job of tracking where the RB was in relation the LOS.  We had another 60+ yard TD play, but had the flag down for Ineligible Downfield since when the RB actually caught the ball he was a minimum 2-3 yards beyond the LOS with 3 restricted linemen well downfield in front of him.

Can't escape the thought that we may have missed a call on the first one but can't call what we don't see.  Any hints on ways to better cover this kind of play from the U's perspective?

For me, the key is always making a note in my mind of the LOS pre-snap. Most of the fields I work are marked very well. After the snap, I watch my line keys. If I read pass, I can almost always take a quick look and see the spot where the receiver caught the ball even if I didn't get to the LOS before the pass because of the crossing receivers. After that quick look, I already knew where my linemen were in relationship to the LOS. You either have something or you don't. The more you make those mental notes, the easier it gets.
