Boy, do I wish the NFHS rules-makers would recognize that, in these instances, the NCAA does have a better idea!  I must inquire, however, why A's foul in the end zone is the exception.....

The theory behind the exception is if the player wasnt fouled the ball handler would have been caught behind the LOS in the endzone for 2 pts anyway same with intentional grounding in the endzone he would have been caught in the endzone if he wouldnt have thrown the ball away but then again these are theories or possible intentions

I found a powerpoint of 2010 CCA mechanics online.  Will I be terribly far off if I work off of those for now?

No, you should be good. There has not been a dramatic change in mechanics since 2010.
